Who would not want to provide nutritious and delicious choices for their family? Particularly, when those choices contribute to longevity and good health. These recipes may be slightly more expensive to prepare, but the savings by not eating the "made-to-taste-good" restaurant food will easily cover the costs.

("Extra-virgin" olive oil cannot contain any refined oil and contains no more than 0.8% acidity. "Cold-Pressed" means no heat was used to extract the oil from the olives. Heat can destroy flavors and aromas. It is preferred that the olive oil be extracted from the same harvest of olives from the same grove of olive trees.)

In 1945, Dr. Ancel Keys, a nutitionist, while stationed in Salerno, Italy traveled to the mountainous areas of Crete. There he observed that the men of the region had low rates of cancer and heart disease and lived to a very old age. Eventually, the Mediterranean diet, through Dr. Keys and others, was introduced to the world.

The attraction, of course, was decreased cardiovascular disease, fewer cancers, less dementia, and less type 2 diabetes. Was this the much sought after "Fountain of Youth"?

With obesity soaring around the world, is it possible that the Mediterranean diet will reverse the trend? It is not likely, as the diet was introduced to the world nearly 20 years ago and obesity is increasing.
